Winter Chrom, Mia, and Amelia

1. Pulled Winter Chrom with HP+/Def-, so I don't think he's too bad(he's just a bulkier version of my Rhajat lol). Since I can patch that up with the Defense/Squad Ace seal, what can I run with him?

2. I pulled a pity breaker Mia with Atk+/Res-, one of the ideal IVs. However, I already got a Spd+/Def- one during the final hours of the Farfetched Heroes. I know Speed is the ideal choice and Close Defense can make it up, but the Attack one has the better bulk with no need for the CD. What should I do with the extra, perhaps train her as an extra?

3. With neutral Amelia having been merged to keep her Speed up, what should I refine into her Slaying Axe+ since she has lots of SP during the training sessions in the Warriors maps?

I swear, W!Chrom with HP Boon is a scary panic ploy user. If you have the seal for it, then run that with his normal as his Def isn't bad with a bane, plus you can refine his weapon with +Def. Honestly, his base kit is great, you run whatever for his c slot.

With Mia, Speed is her best boon period. Her attack is fine at 51, and with flashing blade, will be proving her special quite often. Plus, she not really equipped to take hits, and the extra Defense doesn't make a difference. If you really want more Attack, buff her Speed with Hone Speed as 40 speed is easily reached.

Now with Amelia, Speed is a good option to press her strengths. Defense works as well, allowing her to take a physical hits better. Resistance is not good unless is a Resistance Boon Amelia with Distant Counter as she would have 31 Res. But, yours is neutral, so Speed and Defense are better.

Winter Chrom running Panic Ploy sounds like fun, I can give him that seal instead and maybe set him up as part of an Armor Emblem team.

Might merge the Atk+ Mia into the Spd+ version, though maybe someone can make use of her Flashing Blade...

Those are some good choices with Defense working great with Bonfire.
