Why Slaying axe over brave axe?

I've seen people give Cherche and Frederick slaying axes over a brave axe. Is it a good build? Or do you pick slaying axe for the points? I can see slaying making use of there defences while brave is more offensive but I'm not sure.

I think you somewhat answered your own question. Brave is sheer offense, and Slaying is all defensive. One thing that may come to mind is something like Slaying Axe, Brash Assasult > Desperation + Galeforce...but they need to be able to 2HKO very consistently for that.

There's an often ignored ability of Cherche and Bartre to get their spd up into the 40s using the spd superboon, slaying axe +spd, something like L&D because their def is high enough to take the hit (swift sparrow is maybe fine too, but loses out on enemy phase potential), and a buff or merges (goad fliers, for example).
