what's the point of High Attack when you have inflated stats for PvE
I feel like speed is way more important because it's almost impossible to one-shot these insane stat's that feh has been pumping out for some modes

Speed has always been more important since it’s not only an offensive stat but a defensive stat(it prevents doubles). Not all the time are they the best stat though. It still depends on some units not needing them like for example-most armored units. They can bypass that with the use of wary fighter. I’m not saying it’s bad with armored units though. It’s just that there are better stats to have a boon on.

It's not as if the ones you arent one shotting are really outspeeding you
The main issue is the inflation of the HP stat, the rest is minimal, but when a unit had 80+hp, it means you have to go through slightly inflated defensive stats to even touch that HP (if I remember right LTiki had 84 hp?) That's when it gets intense, because double or not, you're not doing considerable damage to the opponent without true damage (think blade tomes, think glimmer, think stat based specs)

I've never attempted genuine OHKO strategies against them (NB I don't consider AoE specials genuine OHKOs; I consider them faux doubles). My Felicia did pull off 73 damage on a glacies activation on a green axe flier in L.Grima abyssal though (for anyone who doesn't remember, they have >40 def and I think <20 res), and it wasn't enough. Did crush him on the double though.
Generally speaking, I say that speed is very good in PvE. Bold fighter is definitely the exception rather than the rule. You're more likely to get forced-doubled by a breaker than bold fighter, and if you use dragonstone, then haha, there is no breaker! (Except Marth LHB, but that's one map in the whole game.)
However, in abyssal maps, getting through their units, especially for ORKOs, really requires enormous amounts of atk. I didn't collect data methodically, but my general sense is that 30 mixed defenses is common and 80HP is common except in relay defense, where 65HP seems to be more common. So if you want to one-round with galeforce or no special, you need 70 atk or 59 with triangle advantage. If you have glimmer, 62-ish atk do it if you double, which probably requires quite a bit of spd unless you're going for QR, in which case it's hard to use glimmer because you'll lose it if you don't use aether.
So I would say atk and spd are both pretty important in abyssal maps unless you can tank like crazy and your forced doubles are good below 70%HP (vengeful fighter, for instance).
