What to do with +Def -Spd Eldigan?

Got pity broken by him whilst looking for Myrrh. I'm not entirely sure what skills I should put on him.

A skill: Fury
B skill: Vantage or QR
C skill: threaten atk, threaten def or hone cavalry
You can try with this skill set, he is a nice unit

I wouldn't use Quick Riposte, since fury makes him drop below the hp treshold pretty quickly. (In Arena this doesn't really matter since he will likely fight only once or twice)
I personally gave him fury 6 and brash assault + desperation which is pretty good offensively, defensively vantage is probably the best B skill.

Brazen atk/def, QR, close def.
Use a healer in the team.

He'll be a wall at high hp, while dealing amazing damage on low. Keep a healer around to make sure he doesn't die when he needs to take hits.

Fury
Desperation
Whatever
Brash Assault

You can bait a red/green in the first turn, enter desperation range with the help of double fury and, next turn you can pretty much kill anything you'd like, even blue armors sometimes, especially if he is buffed with hone/fortify cav.
