I’m gonna start this off by saying that not all units are created equally. Some might be better off with more atk/spd/def/res.
Some people might prefer units that are of a certain IV.

However, in your case, what would you consider the most important stat(in general)?

I believe speed is the most important stat.

In general, it's speed bar armor units.

True. Just gotta say that not all armored units now hate speed boons. One example of this is Zelgius with his speed reaching 36+4(+10)=40 not to mention buffs and seals.

Another example is Amelia. Currently my +Spd/-HP +1 Amelia hits 44 speed unboosted with Fury 3 and speed refinement on her Slaying Axe. I think she might be tied with +Spd/-HP LnD3 Lucina for the fastest unit in my barracks currently.

It depends on the character, in most cases speed is the most useful stat since it helps both offensively and defensively, but there are some cases where atk will be more usefull because of some effect of brave weapon.
And also slow tanks normally prefer having lower speed to charge special faster, take Lukas for example

Speed definitely. It is used both defensively and offensively, which I'm not sure you could claim about the other stats.
