To be fair, speed has been the most important stat across all Fire Emblem games. You get more out of speed than any other stat (effectively doubling your attack stat, as well as the added bonus of denying opponent's double attacks), especially in this game where your attack stat is heavily inflated compared to the average overall bulk (HP + DEF/RES).

Yep, HP is generally the best stat to dump. Even though it adds to both def and res bulk, HP is super cheap to get from the added skills and seals compared to other stats, if you want to optimize stats (HP +5 skills/seals barring the +12 stat boost from fury) Plus, with the added Weapon refinery you get a free 5 Hp from upgrading just there.

HP is usually the best dump stat on units with enough bulk to take hits over multiple rounds of combat because then they'll just lose less of it. This becomes even more true for DC/CC units.
For glass cannons that can die from one hit, their weaker defensive stat is the best choice.

That's not really accurate though. For one speed has always been the most important stat in Fire Emblem and if you're anywhere between the medium to fast speed tiers you generally want more of it over everything else, either to avoid doubles or to hopefully double yourself. On slower characters that should expect to get doubled speed is the dump stat in order to improve everything else.
Resistance is often the least important stat on melees because it is frequently low enough that they couldn't get hit twice by magical attacks anyway and because they are more likely to trade physical damage. For ranged attackers it's very often the reverse, where their defense is low enough that they can't survive physical attacks.
Min-maxing stats in video games has generally been the most popular way to play because it tends to be the most effective. Build entirely toward a character's strength, while ignoring their weakness, and have someone else fill in for that weakness only if necessary.

It is the Speed Powercreep meta after all. Where 45-46 Speed Felicia’s run QR to double relevant threats, how Swordbreaker is still extremely viable on +Spd, Life and Death Celica’s, and not to mention how 40 Speed Dragons are just your average, everyday Joes now.
We also can’t forget about the ‘I’m definitely still an Armoured unit’ crew of BK, Amelia, and H!Henry.
Although I do agree that the recommended IVs on this site can generally be pretty simple minded and one dimensional at times.

That's why I only browse character pages for potentially good individual abilities to add to someone, not for full builds. Quite often, my ideal build for a unit varies vastly from what the site recommends. My ideal M!Robin, for example, is +RES/-DEF and I plan to build him with Blarblade and Life and Death to make him into more of a sweeper in tandem with Nohrian Azura. So maybe I look to his page for a better B ability than a breaker, but not for a full build. This site likes to try and build every character who's remotely similar the same way. Of course Rhajat isn't as good at sweeping as S!Elise. She's not meant to be.
