I have a +Def -Res Morgan.Should I run Fury with him or Fodder for Spur Def/Res 2?
And should I 5* him or wait to summon another copy?

Well for me If I really like the character then I 5* that character even if that character has Bad IVs and just hope for the best that I get a better IV.
If you really like him then 5* him and Fury is a good choice on him but Otherwise don't 5* him and focus on other units.
I am adding a question here: I have a +SPD-def 5* Morgan with Fury but barely used him. How good is he actually??
Regarding the Building question: for Units available as 4* I would wait until you have good IVs before Building them. Unless you don't want to merge him to 5+10 anyway it will save you 20k feathers on the Long run
