Joshua builds

I have two ideas:
Fury Desp Glacies and both Spd and Def ploy. Simply a safe, offensive build with a focus on ploys. Moonbow may also be ran for consistent damage.

Idea two is Warding Breath Wrath Glacies and both Spd and Atk ploy. If he can ploy spd he can have an easier time doubling in enemy phase without QR, granted Iceberg can be taken for more consistent damage too but go big or go home y'know?

I also thought about giving these skills to either Roy or Fir with refines, but I have built both other Roys and have Chrome and Marth for Dragon slaying, and Fir isn't well optimized for enemy phase imo unless she dedicated herself to mages, in which case she loses Warding Breath (I do have DC fodder but I don't wanna blow it on her tbh).

My idea is to give him both sets and switch as I feel but I wanna know which y'all think is better

Since you're using his resistance so much, I will assume you're using his base Audhulma.

The first seems to be a player-phase build, so I would recommend iceberg instead of moonbow. Assuming you activated speed ploy and double with the (35+3)+5=43 effective speed vs a melee enemy, iceberg would deal (33+3)*0.5=18 damage (same as moonbow vs 60 defense).

If you want to use the second one I personally would recommend close defense iceberg trading 6 less melee damage taken for 10 less special damage (39*0.5=19 vs 37*0.8=29) and a player phase special, as well as saving a 5 star fodder (I'm a budget guy).

Attack ploy seal is better for a mixed phase build, but if you want to focus on enemy phase a second close-defense seal is more effective.
