Definitely +RES -DEF. He'll still be a solid physical tank despite the negative and his magical resilience will see a significant boost (his damage reduction effectively multiples the effect of his resistance so even small increases have a big impact). Disclosure: My own Sigurd is -DEF.
As for the other set.... +HP does very little for him and -SPD is really bad.
