I pulled a +Atk -Res Gunnthra and have been wondering how to build her. I've been thinking death blow on A slot would work well, but I don't know what to run as her special, or C slot on a non-cavalry team.

The basekit she comes with is already decent enough for her. You could just switch up glacies for dragon fang for a heavy blade set.
You could go for a standard set with her with fury and glimmer. And keep res ploy so she can ohko more low res melee units. This is bec unless she has a res boon, her res is not reliable enough to catch other mages with res ploy. So dont worry too much abouth the res bane
I'm running a Gunnthra in a Cavalry team with:
Blizzard
Reposition
Moonbow
Darting Blow 3
Chilling Seal
Ward Cavalry
Seed +3 seal
Odds are you won't even notice her -res with a Ward Cavalry buff or two. Gunnthra also depends on either favorable color matchups or attacking the unit her Chilling Seal is currently targeting thanks to Blizzard working like a debuff based blade tome. I go with the speed buff skills to allow her more doubles and special triggers from Moonbow. You could also consider running Heavy Blade (seal/skill) on yours if her atk is over 50 and a low cooldown special to spam each fight.

Luna
Darting Blow
Chill atk/spd fortify cavalry
Speed + 3 seal
As you may have guessed I run her in a horse emblem team so she can get a lot of speed. I use her together with Sigurd , LA!Roy and s!Catria .
