he's def gonna have a stat boost for being a special unit and being a dragon doesn't give any BST boosts so he'll probs have around the same BST as Winter Lissa

I am speculating a high BST for him. Possibly flirting with 180 BST because not only is he armored, but he is a dragon. Dragons are about 5 higher than infantry, armor is about 5-8 higher than dragon, but an armor dragon? You see where I’m going...

Based on my parameters, I used Soleil as the base at 162. Myrrh is the newest dragon at 167. The newest armor, Eliwood, has 175, but most armors post-Amelia (minus tome users) hit 173, so I generalized at 5-8. With that model, you’re looking at a minimum of 178 BST, 180-181 max if they base it off Eliwood’s beefed up BST.

I feel like Grima is going to go past 175 BST, seeing that Myrrh went past 165 BST for a Flying Breath unit. This might become a normality for Breath users, but outside of it, not so much.

Dragons don't have any changes to their BST.

It's just that young characters do, and a lot of the dragons are (relative to their species) young. Adult Tiki and Corin have completely normal infantry stats.

Grima on the other hand is quite physically mature, which if anything would be putting him in with Jagen/Gunter.

Powercreped armour stats are around 173-175 for melees. Take off 4 points for the veteran penalty and we have 169-171.
