+Def, -HP.
His Res is already lacking and since it's a superbane it reduces his ability to take advantage of his prf to murder mages. Sure he loses the super boon to Atk but his Atk is already above average. Since you said you're not running armor emblem, Atk Tactic 3 can simulate his Atk boon without the drawback of lower Res.
With -HP, he suffers on both defensive skills; however, his Def balances out his physical side while his Res is now useable to the point where it can be buffed to where he receives 0 dmg against an enemy.

vs mages I think +atk is actually better unless you really go hard on his res, like, get it to 38+, which isn't too hard if you start with neutral res and use distant def. But +atk is just more efficient because forget about surviving the double and just OHKO them back. A lot of mages don't have 60 physical bulk, and his matchups against red mages are generally very poor regardless (plus, if you can buff his atk or get some atk from his A-skill, he might OHKO even some red mages)

So each of us is being consistent with ourselves. If you look at my post below, I recommend that +atk switches from VF to OHKO strategies on +atk and that VF setups really invest well into his def and res because he's very likely going to take an enemy special head-on.

From a pragmatic standpoint, +def -HP is probably better than +atk -res except on OHKO builds such as vantage builds or fierce breath + glimmer + wary fighter / wrath or something like that.
+atk -spd was the first M.Grima I ever pulled and I think +atk is the IV that represents his diabolical character most, so despite pulling +def -spd I have continued with +atk. I don't like +atk for tanking builds (even though it undeniably works - I even tanked and killed Garon in BHB lunatic and I don't think I was even buffing his res); I'm not that much a fan of his defenses in general without some wards stacked on him, so if you go with +atk I do recommend bold fighter or some kind of OHKO setup.
But in PvE if the HP inflation gets intense, don't play for OHKOs unless you're using special spiral + breath skill + astra, which can produce comical amounts of damage (I think I've seen over 230 damage on a screenshot once).
