If you're considering Kaze I would say consider Felicia, though each has a different advantage. Felicia has more spd and res by 1 point each but she sacrifices 7 atk for adaptive damage and a mostly guaranteed glacies against any mage she doubles.

How would you build Jeorge? I'm struggling to see better than a vantage OHKO setup

If use his bow like how many characters use fury to buff up their defenses for desperation and then run a stronger A slot. Something like this
